This warming vegetarian ragu is comfort food at its best—healthy, hearty, and full of flavour. Fresh mushrooms, tomato paste, and soft goat’s cheese come together to create a thick, decadent sauce perfect for your favourite pasta. The mushroom base blends rich portobello, shiitake, and lion’s mane varieties with garlic, balsamic, and thyme. Lion’s mane mushrooms are known for their bioactive compounds that support brain, heart, and gut health.

1 tbsp olive oil
2 large onions (halved and thinly sliced)
2 tsp freshly cracked pepper
300 grams mixed mushrooms (swiss brown and shiitake) (sliced)
1 tsp mushroom stock concentrate (optional)
3/4 cup filtered water
100 grams organic tomato and basil pasta sauce (or 50 grams tomato paste)
80 grams mild soft goats cheese
Fresh parsley and/or micro greens (to garnish)
Parmesan cheese (grated to serve)
Cooked linguini (cook as per packet instructions)

Add olive oil to a heavy based pan.
Gently braise onion for approximately 5 minutes.
Add pepper, mushrooms and concentrate, mix well and gradually add water as required.
Cook for 5 minutes or until mushrooms have softened.
Add tomato pasta sauce, stir well and simmer a further 5 minutes, adding more water if the sauce starts to stick to the pan.
Add goats cheese, stir through until creamy.
Pour over freshly cooked pasta, or rice.
Top with parsley, micro greens and/or grated parmesan.
