This spinach frittata is a quick, easy meal that works any time of day. With just five key ingredients and under 20 minutes prep, it’s perfect for busy days. Make extra at dinner and enjoy the leftovers for breakfast or lunch the next day.

  • 1/2 tbsp extra virgin olive oil

  • 1 brown onion (chopped)

  • 1/2 bunch silverbeet spinach (stalks removed) (chopped)

  • 1/4 cup filtered water

  • 4 organic eggs

  • 50 grams goats cheese (cubed)

  • Himalayan salt and pepper (to taste)

  1. Pre heat oven to 180 degrees C.

  2. Heat oil in a heavy based, oven-proof pan.

  3. Sauté onion for approximately 5 minutes.

  4. Reduce heat and add chopped silverbeet, gently mix.

  5. Add water, cover and steam for approximately 10 minutes or until cooked and there is no excess water, stirring occasionally, adding more water if necessary.

  6. In a bowl, whisk eggs. Then add goat's cheese and salt & pepper to taste, gently mix.

  7. Add to silverbeet mix. Gently stir and fold occasionally for approximately 3 minutes.

  8. Finish off in oven to cook through (approx. 5 minutes). Serve and enjoy.
