Another Healthy Luxe take on a traditional Indian dish, filled with delicious, warming spices. It includes superfoods like fresh turmeric, with a pinch of matcha powder (optional) added for an extra antioxidant boost. This addition doesn’t change the flavour but enhances the nutritional value.

240 grams baby spinach leaves
1/4 cup filtered water
100 grams paneer cheese (or feta) (cubed)
1-2 tsp matcha powder (optional)
1 large tomato (peeled and chopped)
1 onion (finely chopped)
1 green chilli (chopped)
1 tbsp ginger (grated)
1/2 tbsp turmeric (grated)
1/4 tsp ground coriander
1/4 tsp garam masala
1 pinch salt
1 tbsp coconut oil
SPELT ROTI
1 cup sprouted spelt flour
1 pinch salt
1/3 cup warm water
1 tbsp olive oil

Gently braise onion in melted coconut oil for 1-2 minutes
Add chilli, spices and tomato*, leave to simmer for a further 2-3 minutes, stirring regularly
In a separate pan, wilt spinach in filtered water
Add spinach and liquid to spice mix, mix well
Then add chopped paneer, matcha powder (if using), stir and allow to absorb flavours for a few minutes
To make roti, combine all dry ingredients in a mixing bowl
Create a well in the centre and add water and olive oil, mix until it forms a dough like consistency
Divide into 3-4 equal portions and place on a floured rolling board, roll flat
Cook on a non-oiled non-stick pan for approx. 2 minutes per side
Serve curry with roti, brown rice and/or greek style yogurt
