Another quick, nutrient-packed dish that’s as versatile as it is delicious. Perfect for any meal, you can tailor it to your taste—try it with smoked salmon and goat’s curd or avocado and halloumi. We finish it with fresh mint, cherry tomatoes, avocado, and tender young greens.

300 grams pumpkin
2 corn cobs
1 green chilli (finely chopped)
1 small red onion (finely chopped)
1/2 tbsp fresh turmeric (grated) (tip: take care when using turmeric as it can stain clothing and surfaces)
1/4 cup besan flour
2 organic eggs
Himalayan salt and pepper (to taste)

Steam diced pumpkin and corn cobs in saucepan with 1 cup filtered water for 5-7 mins. Add more water occasionally, if required.
While pumpkin and corn steaming, finely chop chilli, onion and combine with grated turmeric.
Mash pumpkin, remove corn kernels from the cob and add to the chilli mixture.
Beat eggs in separate bowl and add to vegetable mixture.
Add besan flour and mix well.
Place olive oil in a saucepan.
On medium to high heat, place approx. 1/4 cup corn mix in the pan and cook for approx. 2 minutes per side.
Top with avocado, fresh mint and serve with cherry tomatoes, organic EV olive oil, fresh lime and young greens (cress, rocket, parsley).
