This simple teriyaki marinade is a versatile staple that brings rich, savory-sweet flavours to salmon, tofu or eggplant. It’s quick to prepare and elevates any meal with its balanced depth. Finish your plate with a handful of chopped coriander, a squeeze of zesty lime, and a sprinkle of toasted sesame seeds. These final touches add brightness and a satisfying crunch, rounding out the dish perfectly.

  • 500 grams Saikou salmon (or wild caught salmon)

  • 2 tbsp sesame oil

  • 2 tbsp tamari

  • 1/2 small bunch shallots

  • 1 small red chilli (finely chopped)

  • 1-2 tbsp ginger (grated)

  • 1 tbsp lime juice

  • 1 tsp lime zest

  • 1 tsp manuka honey (or raw organic honey)

  • 1 tsp coconut oil

  1. To make teriyaki marinade, combine chopped shallots, grated ginger, sesame oil, tamari, chopped chilli, Manuka honey, lime zest and juice.

  2. Coat salmon with marinade, ensuring it is well covered.

  3. Place in the fridge and leave for a minimum of 1-2 hours.

  4. Place salmon in a non-stick pan over medium-high heat (skin side down) with marinade.

  5. Cover and cook for 5 minutes (or slightly longer if you prefer cooked through).

  6. Turn heat off and stand for a further 5 minutes.

  7. Serve with rice, quinoa and/or salad. Garnish with lime wedges and fresh coriander (or herbs of choice).
