4 organic eggs
1 tbsp extra virgin olive oil
1 tbsp black truffle oil (or to taste)
250 grams baby spinach leaves (wilted)
40 grams parmesan cheese
1 avocado
2-4 slices gluten free bread

Place olive oil in a non-stick pan and allow to melt over medium heat.
Beat eggs and add to the pan.
Gently fold eggs for 2-3 minutes, taking care not to overcook.
Serve with sliced avocado, wilted spinach, wedge of fresh lemon and your choice of toasted bread.
Drizzle eggs with truffle oil and sprinkle with grated parmesan cheese.
Garnish with Himalayan salt and freshly cracked pepper.
