Whenever we bake this loaf, we can’t help but question why most banana bread recipes rely on so much refined sugar. Ripe bananas bring natural sweetness and a boost of nutrients. This recipe is a collab with Sophie (@coconutandbliss).

  • 1 cup almond meal

  • 1/2 cup buckwheat flour

  • 1/4 cup coconut sugar

  • 1 tsp baking powder

  • 2 tsp vanilla bean powder

  • 1/2 tsp cinnamon

  • 1 tsp salt

  • 2 organic eggs, separated

  • 3 ripe bananas

  • 1/4 cup cashew butter

  • 3-4 tbsp coconut oil (melted)

  • 1/4 cup warm water

  1. Preheat oven to 180 degrees C.

  2. Combine all dry ingredients in a large mixing bowl.

  3. Place banana, egg yolks, cashew butter, coconut oil and warm water in a blender and blend until smooth.

  4. Pour into the dry mixture and mix well.

  5. Whisk egg whites until firm peaks form and then gently fold into the mixture.

  6. Scoop into a greased and lined loaf tin (20cm x 10cm) and bake for 30-35 minutes.

  7. Set aside and allow to cool for approx. 15 minutes and then turn onto cooking rack.

  8. Serve with tahini and honey, nut butter or your choice of spread.
