These decadent cacao cashew clusters make for the perfect breakfast or snack. They are delicious served with coconut yoghurt, fresh berries and a spoonful of peanut butter or as a topping on acai bowls or your choice of smoothie bowl.

2 cups rolled oats
1 cup puffed quinoa
1 cup cashews
3/4 cup buckinis
1/2 cup cacao powder
1/4 cup cacao nibs (optional)
1 tsp vanilla bean powder or extract
1 tsp salt
1/2 cup coconut nectar or maple syrup
1/2 cup coconut oil, melted

Preheat oven to 170 degrees C.
Combine all dry ingredients in a large mixing bowl. Add coconut oil and nectar (or maple syrup), mix well.
Scatter granola over a lined baking tray.
Place in the oven and bake for 20-25 minutes, turning every few minutes.
Allow to cool completely.
Break apart into clusters and store in an air-tight glass jar.
