There’s nothing quite like a nourishing bowl of oats to warm you up on a cool morning. While oats can sometimes feel a little bland, this recipe is full of flavour. The natural sweetness of a vibrant berry coulis pairs beautifully with the creamy richness of peanut butter, making every spoonful comforting and delicious.

1 cup frozen raspberries or blueberries
1/2 cup orange juice (or lemon juice)
1 tbsp maple syrup
1/4 tsp vanilla essence
1 cup gluten free oats
1 cup coconut milk
1 cup coconut water
1 tbsp mesquite powder (optional)
1-2 tbsp smooth peanut butter (+ extra to serve)
2 tsp maple syrup or raw honey (optional)

Firstly, prepare coulis. Combine all ingredients in a saucepan and place over medium heat. Leave to simmer for approx. 5 minutes, stirring occasionally. Set aside and allow to cool.
Combine all ingredients for the oats in a saucepan and bring to a boil before reducing heat to simmer for approx. 5 minutes.
Transfer to bowls and top with your raspberry and/or blueberry coulis, fresh berries, shredded coconut, peanut butter and/or maple syrup.
